I'd desire a First Officer Panel, an FMS and an Overhead Panel, however looks like these folks don't make it.

They do. Infact, they could sell you a whole simulator, B737, B747, B777 and more. See their parent site at http://www.flightdecksolutions.com/. Just need to save some pennies.
