been to both...Cairo has a new airport, start taking photos there and you'll know all about it, be very discreet in both places, chances are you'll be in Dubai during the dark hours so it'll be a lot harder.
anyway, Dubai has panels iirc that separate passengers from the glass where you can look at your a/c.
