Default 737-800 syd-drw

This is a curiosity question which will hopefully be able to be answered by one of the pilots or knowledgeable folk on the forums.

With the 737-800 flying SYD-DRW with a MTOW of around 79.0 tonne (174,200lbs), comprising of 11 tonne (24,200lbs) of fuel based on the "average" flight schedule, how much fuel would you expect to arrive with?

I am referring to the standard 738, not the HGW/IGW equivalent.

The reason for the question is that I am attempting to fine tune values for a Flight Simulator model which appears to have incorrect Thrust Specific fuel consumption values and experiences above average fuel burn.

I'm not basing my corrections solely on the answer to this question but it makes for a relatively good starting point.

Thanks in advance for any answers.
